Rice Kheer
Rice kheer is a famous Indian dessert that is made with rice, sugar, milk, and flavored with Cardamom and dry fruits. It is a great dessert for all occasions and celebrations and can be served Hot or Cold.
- ¼ Cup Short Grain or Basmati Rice ((Chawal))
- 1 ltr Full Cream Milk ((Full Fat Milk))
- 10-12 Almonds ((Badam))
- 10-12 Cashews ((Kaju))
- 10-12 Raisins ((Kishmish))
- ½ tbsp Cardamom Powder ((Green or Choti Elaichi))
- ½ Cup Sugar ((Cheeni))
- 1 pinch Saffron Strands ((Kesar))
Preparation
-
Rinse a 1/4th cup of Rice nicely until the water turns clear. Then Soak the Rice for 10 Minutes.

Slice the Cashews & Almonds and keep them aside.

Take 1 tbsp Lukewarm Milk and Add Saffron strand to the milk and keep it aside.
Procedure / Recipe of Kheer

Take a thick Bottom Pan or Non-Stick Pan. (Preferably a Non-stick pan).

First, pour some water into the pan (2tbsp) and then add milk. (Adding some water first will prevent the milk from sticking).

Keep the flame medium to high and let the milk come to a boil.
-
After the milk is boiled, simmer the flame.
-
Now drain the soaked rice and add rice to the milk.

Let rice be cooked at a low flame for about 20 minutes. Don't cover the pan.

Stir at intervals & make sure that the rice or the milk is not sticking to the pan.

After about 20 minutes, check the rice. If it is half cooked, add sugar to it and continue to cook for another 15 minutes. Stir at intervals.

After 15 minutes, add almonds, cashews, and Raisins.

Continue to cook for another 10-15 minutes, until it is cooked and mixed properly.

After the rice is cooked, the milk gets thickened and we get a creamy texture.

Now the Rice Kheer is prepared.

At this time add cardamom powder. It gives flavor to your Kheer.

You can serve the kheer hot or chilled.
Tips

We can add Rosewater or Kewra water once Kheer is prepared or add some rose petals to give a nice look and flavor.

You can also use condensed milk but then cook the rice first in milk or water or half-half of both. Then add the sweetened condensed milk with some milk.

Don't forget to reduce the amount of sugar if using condensed milk.

You can use the soaked rice as well (soaked overnight).
